Femten elegante værelser og en gourmetrestaurant udgjorde en gammel oliemølle: det er et karakteristisk og intimt sted at bo i Montefollonico, et landligt pensionat nedsænket i Sienna-provinsens bakker. Vi er i Toscana, mellem Pienza og Montepulciano, på højderyggen, der deler Val D'Orcia og Crete Senesi. I begyndelsen af 70'erne var vi banebrydende for at dedikere vores liv til at være vært i denne del af det toscanske landskab.

Vi deltog flere år senere i åbningen af de allerførste lokale gæstehuse og stigningen i de toscanske ferier som et must.

Bevidstløshed, beslutsomhed eller bare tilfældigt? Vi ved ikke præcis, hvad der førte os herop. Uden tvivl en fælles og ubetinget lidenskab for dufte og aromaer, for den smagfulde ekstra jomfru olivenolie, for Sangiovese -vine, salami og ost fra vores Siennese -land sammen med hengivenheden for den gamle kulinariske læring, der blev overleveret fra mor til datter som den gamle jordbearbejdningsteknikker videreført fra far til søn.

Men det, der hovedsageligt ansporede os til at træde frem, var tilliden til, at folk hurtigt eller senere helt sikkert ville vende tilbage til enkeltheden og hvad vores definition af gæstfrihed er. Næsten fyrre år senere er vi stolte over at kunne sige, at vi havde ret. Gæstfrihed er ikke kun et middel til at åbne husets døre for gæsterne, men at dele med dem vores passion gennem kendskabet til vores land.
